Vanilla was introduced to Mauke in the late 1930s. When found to not be commercially viable plantations were abandoned and the vines worked their way into Mauke’s harsh jagged makatea (ancient uplifted coral). Now, 80 years on, from these wild vines we bring you Maukean vanilla – ripened on the vine to make the most of nature’s sugar production, then matured by weeks of alternate sun drying and sweating before being steeped in alcohol for many months to extract the best flavour.
